Mindful Meal Prep: Apple Pie Crockpot Oats
You’re trying to balance your busy work schedule, gym classes, eating healthy and regular social commitments with your best friends (most important) – and you start to wonder where everyone else gets the time? Well, I think I cracked the code and it’s easy: their slow cooker.
As much as we all hate to acknowledge it, winter isn’t going anywhere just yet. While the days are starting to get longer and the temps are rising (slightly), we know spring is on its way, but you might as well enjoy the rest of the season with a warm morning treat throughout the week.
We’ve all heard of meal prep and while it may seem intimidating to some, your slow cooker can play a crucial role in making meal prep less time-consuming. That’s why I love these healthy breakfast oats. As (arguably) the most important meal of the day, breakfast is often sidelined by the snooze button and racing out of the door at the last minute. If this sounds a little too real to you, plug in your slow cooker and get assembling - these apple pie oats are perfect for your busy lifestyle and this recipe will ensure you’ve got your morning meal covered.
Apple Pie Oats
What you'll need
- 1.5 cups steel cut oats
- 4 cups unsweetened almond milk
- 3 medium apples
- 2 tsp coconut oil
- 2 tsp cinnamon
- 1 tsp nutmeg
- 2 tbsp honey
- 1/2 tbsp brown sugar
- 1 tbsp lemon juice
GET TO IT!
- Chop your apples into cubes.
- Add all the ingredients to the slow cooker.
- Mix together.
- Cook on low for 8.5 hours.
- Scoop single portions into microwaveable containers (for an easy grab-and-go breakfast)
- Most important step: enjoy!
You can also top your oats with your favourite ingredients, I like to throw some blueberries in, sprinkle a little brown sugar on top or mix in a 1/2 tablespoon of peanut butter.
You can keep leftovers in the fridge for five days. To reheat, just pop your container in the microwave for 30 seconds.
