Pumpkin Spice Protein Pancakes
As much as I HATE to admit that the summer is officially over, one of the things I'm most looking forward to about the Fall is allllllll of the warm, delicious & spicy fall FLAVOURS. From cinnamon, to apple pie, to pumpkin spice - I just want it all.
Speaking of pumpkin spice... I am such a sucker for anything pumpkin-flavoured! Whenever Thanksgiving weekend rolls around, I tend to treat pumpkin spice like they do in those Frank’s Red hot sauce commercials (you know the ones!) - and I just put that sh*t on errrrthang. That's why, today, I whipped up a Fall-inspired version of my FAVE protein pancakes recipe to really get me in the mood.
Behold - these deliciously-fluffy PUMPKIN SPICE protein pancakes!! It tastes just like you’re eating dessert for breakfast, but it's got 30 grams of protein - and absolutely NO guilt whatsoever. (Not that anyone should ever feel guilty for eating pumpkin pie for breakfast! Girl, you do you.)

3/4 c. egg whites
1/4 c. pumpkin purée
1/4 c. rolled oats
2 tbsp. coconut flour (can sub. for almond or oat flour)
1 tsp cinnamon
1 tsp pumpkin pie spice
1 tsp. baking powder
1/2 tsp. baking soda
1 tsp. sugar free vanilla essence
Using a whisk or standing mixer, whip egg whites in bowl until they form stiff peaks
In separate bowl, combine all dry ingredients
Fold egg, pumpkin purée and vanilla to egg white mixture and mix until fully combined
Mix in dry ingredients (including spices) until incorporated
Cook on a skillet with a touch of coconut oil, or on a non-stick pan
Serve with your FAVE toppings! (I like adding a dollop of cool whip to really make it taste like pumpkin pie.)
