KITCHEN VIRGINS: Banana Chocolate Chip Ice Cream Bites

For this month’s piece, I was supposed to make overnight banana almond butter oats, but I had a serious craving for ice cream. I didn’t want to let the bananas that I put aside to go to waste so I hit Pinterest to see if I could use them to make a yummy and healthy frozen treat. Instantly, I came across this easy TWO INGREDIENT recipe.

Here’s what you need:
6 very ripe bananas3/4 cup of mini chocolate chips
First, slice the bananas into 1/2 inch slices (give or take, mine weren’t perfect) and lay them flat on a baking sheet lined with parchment paper. Cover it with plastic wrap and toss it into the freezer for 1 1/2 hours.
After what seems like forever, you’ll take the bananas out of the freezer and let them set for 5 minutes (this recipe requires a bit of patience) while you set up your food processor. Place the bananas in and pulse until smooth and then toss in your chocolate chips.
Grease a mini muffin pan with non-stick spray and scoop the banana ice cream into each cup (feel free to add some more chocolate chips on top). Now it’s time to really test your patience as you toss the muffin pan into the freezer for an hour.
Remove the pan out of the freezer and pop each bite out with a knife. Stack the bites in a freezer safe container with a lid (add parchment paper between each layer to avoid sticking), and voila!
These bites are delicious and simple, but took a lot longer than I’d like. I think by the time I was done making these, my ice cream craving was almost gone. I’d give this recipe a 7/10.
