Nicole's Recipes: Easy & Healthy Spaghetti

So last weekend, I was home alone for dinner and didn’t really know what to make. My parents were out for dinner so I didn’t have a lot of leftovers, and I didn’t feel like ordering in. It was a pretty chilly night, and I wanted something that would give me all the warm feels I needed to stay comfy and cozy! I really felt like pasta, but we had no pasta sauce on hand. So I looked at the ingredients I had in the kitchen, and whipped up this delicious and easy lemon shrimp pasta recipe that I can’t even believe I made myself! It turned out so well, it was so good and pretty healthy if I say so myself! Hope you enjoy xo.

Spaghetti with Shrimp and Lemon Oil

Ingredients

For the lemon oil:

½ cup extra –virgin olive oil

1 lemon, zested

For the pasta:

2 handfuls of whole wheat spaghetti

2 Tbsp olive oil

2 shallots, diced

2 cloves garlic, minced

Half a bag of frozen shrimp (more or less depending on your love for shrimp. It’s my favorite protein so I add a lot)

¼ cup of lemon juice (about 2 lemons)

1 lemon, zested

1 tsp salt

½ tsp pepper

A handful of greens (I used spinach)

Recipe

For the lemon oil:

  1. Combine the olive oil and lemon zest in a small bowl and reserve.

For the pasta

  1. Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender (follow directions on the box). Drain pasta, reserving 1 cup of cooking liquid.

  2. While cooking the pasta, use a large skillet and warm the olive oil over medium heat. Add the shallots and garlic and cook for 2 minutes. Add the shrimp and cook until pink (usually about 5 minutes). Add the cooked pasta, lemon zest, lemon juice, salt and pepper. Toss to combine. Turn the heat and add your greens.

  3. Strain the lemon zest out of the reserved lemon olive oil and add the oil to the pasta.

  4. Serve immediately.

SO good and super easy!
