Recipe: Healthy “Apple Pie” Oat Bars

Unknown.jpeg

This was a recipe I stumbled upon, of course on Pinterest, when I was looking for a quick, easy, and healthy recipe to snack on while at work or pre and post workout. It’s “Apple Pie” Oat Bars! The recipe is so simple and tasty and was actually posted by a mother to help have her little ones have a healthy treat. I thought, why not try it out?

Ingredients

  • 1 Cup quick cook oats

  • 1 Cup rolled oats

  • 2Tbsp chia seeds

  • 1.5 tsp cinnamon

  • 30g melted butter or coconut oil

  • 1 cup apple purée or applesauce

  • 1-2 Tbsp honey or maple syrup (optional)

Instructions

  1. In a medium bowl, mix the oats, chia seeds and cinnamon

  2. Add the melted butter and apple purée, mix to combine

  3. Line a baking tray (I use a 2cm square cake tin)

  4. Press the mix into the bottom of the baking dish so that it is an even layer, it should be around 1.5-2cm thick

  5. Bake at 180 degrees celsius or 375 Fahrenheit for 25 mins, it should be firm to the touch but not hard

  6. Cool and slice into squares

This snack is now one of my go to’s when wanting a light snack, especially before the gym, it’s not too heavy before a workout!
