Donut for your thoughts?! (Recipe)


Today, I thought i’d share one of my all-time favourite recipes I discovered on Instagram that is actually DELICIOUS, and filled with simple and wholesome ingredients! We’re making donuts!

These are dubbed the Chunky Monkey Pancake Mix Donuts by the two girls behind @AthleticAvocado (found here!) These girls make awesome recipes (especially desserts!) and share them on their Insta page! Honestly, all of their recipes have less than 10 ingredients, and they are usually stuff you have in your cupboard! These donuts are super easy for anyone attempting to try to bake, or someone who just wants to stop eating junk and really know what’s going into their baked goods! Really hope you enjoy!


Ingredients/What You Need:

  • 2 cups of Pancake mix (feel free to use gluten-free mix!)

  • 2/3 cup Non-dairy milk (Almond, Oat, Cashew, etc)

  • 1 ripe Banana, mashed up

  • 2 Tbsp Natural peanut butter

  • 2 Tbsp Maple syrup

  • 1/2 cup Mini dark chocolate chips

  • Peanut Butter Glaze:

  • 2 Tbsp of Natural peanut butter

  • 1 Tbsp Coconut Oil, melted,

  • 1 Tbsp Maple syrup


  1. Preheat oven to 350 degrees. Spray cooking spray in donut pan and set aside.

  2. Add pancake mix to a large bowl. In a smaller bowl, mix together milk, banana, maple syrup and peanut butter. Add to bigger bowl with pancake mix, and mix well.

  3. Fold in chocolate chips

  4. Fill donut slots 2/3 full and bake for 12-15 minutes, or until golden. (Makes around 8)

  5. Let cool!!

  6. For glaze: Melt coconut oil first. Combine all ingredients in a shallow bowl.

  7. Dip tops of donuts in glaze and let Harden.

  8. Melt dark chocolate chips, and drizzle on top, if desired!
