Healthy Vegan Banana Butterscotch Stuffed French Toast

Lots of people turn to a plant based diet with the understanding that they have to give up some of their favourite not-so-plant based foods. After 3 years of being plant based I can honestly say that this just isn’t true! You just have to find some bomb swaps to replace them with. Now trust me, this isn’t always easy. But sometimes.. it’s VERY easy. AND SOMETIMES, the plant-based version is better than the OG. That is one thousand percent true when it comes to this french toast. Not only that but what’s better than french toast? STUFFED french toast. I must admit though, I’m no magician - the word stuffed basically just means I layer the ingredients between bread slices instead of putting them all on top. 

You can take this french toast recipe and choose to top it however you want, I just figured I would show you a fancier way to do it. Some of my other favourite toppings not mentioned in the recipe are vegan yogurt, berries, some healthy cocoa sauce, or coconut flakes. The possibilities are truly endless!

This recipe is crazy easy, and crazy delicious. Enjoy!

RECIPE 

Ingredients: 

  • 2-3 slices of bread of choice

  • 1 T chia seeds

  • 1/2 cup Unsweetened Almond Milk

  • 1 T Maple Syrup

  • 1/4 t cinnamon 

  • 1/4 tsp vanilla extract 

Toppings: 

  • Banana

  • Sugar free fat free butterscotch pudding mix by J-ELLO

  • Nutbutter of choice

  • Syrup

  • Granola

Instructions: 

  1. Mix together almond milk, chia seeds, cinnamon, maple syrup and vanilla extract.

  2. Place bread in mixture for 30 seconds a side

  3. Cook in a frying pan on medium heat for 5-7 minutes a side depending on the thickness of your bread. 

    (This last step is the most important in myyyyy humble opinion.)

  4. Take your first slice off the frying pan and put some sliced banana, pudding mix, nut butter and granola on it. Then put the second slice on top and add the rest of the toppings finishing with maple syrup. This is why 3 pieces works best because you can layer it up and cutting/biting in to those layers is HEAVENLY.
